Easy Gajar Ka Halwa - 3 ingredients

Winters call for cosy food and in India, winters aren’t complete without soft melt in the mouth Gajar Ka Halwa - Carrot Pudding.

Once you try this recipe, I promise you wouldn’t look out for another recipe because the flavours are so beautiful and memorable.

Stepping right into the recipe.

Ingredients:

1 kg shredded/ grated Red Carrots

1.5l full fat milk

180g granulated/ castor sugar

For flavour :

1/2 tsp Cardamom Powder

Handful mixed slivered nuts

Preparation:

  • In a large deep skillet bring milk to boil

  • Add the carrots and mix in

  • On medium-low flame cook the carrots and milk until the milk reduces by 80% and the carrots get to a semi pudding like texture

  • At this point, add in the sugar and cardamom and mix in well.

  • Slow cook with stirring frequently to a point where the milk completely evaporates and starts leaving its fat/ghee.

  • Once you are happy with the consistency of the halwa, add in the nuts and give it a final mix.

Tips:

  • I add in a few strands of Saffron at the first stage of boil, this not only brings in a fine flavour but also a gorgeous orange colour to the final halwa

  • Instead of adding plain nuts, I like to chop some mixed nuts like cashews, almonds, pistachios and fry them in with a tsp of ghee / clarified butter. This gives a fantastic crunch and a balanced flavour to the halwa.
